Bleu Cheese Burgers

Ingredients
- 1 lb lean ground beef
- 1 egg
- 1/4 cup bread crumbs
- 1/4 cup finely crumbled blue cheese
- 2 tbsp finely chopped fresh chives
- 4 tsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1 clove garlic, minced
- 1/2 tsp salt and pepper
- 4 burger buns
- 4 tsp mustard
- 4 tsp ketchup
- 4 tsp mayonnaise
- 1 cup arugula
- 4 thick slices tomato
- 4 slices red onion rounds
Directions
- In large mixing bowl, mix together beef, egg, bread crumbs, blue cheese, chives, mustard, Worcestershire sauce, garlic, salt and pepper (do not overwork). Divide into 4 portions; shape into 1/2-inch thick patties.
- Preheat grill to medium-high; grease grate well. Grill burgers for 10 to 12 minutes or until internal temperature reaches 160°F. Meanwhile, grill buns for about 1 minute or until lightly toasted.
- Arrange burgers on buns; top with mustard, ketchup, mayonnaise, arugula, tomato and onion.
Tips
Brioche-style buns work nicely for grilled burgers.
